pomegranate guacamole

I think it'd be funny if we pronounced "guacamole" like "whack-a-mole," you know the carnival game?  Gwack-a-mole.  No?  Bummer... 

Guac is still basically the best invention ever, because 1.) it tastes amazing, 2.) it's chock full of stuff like omega-3s, good fats for your brains, and such, 3.) it's super quick and easy to make! 

First, go out and grow you some tomatoes, onions, jalapenos.  Plant an avocado tree, a lime tree, and a pomegranate tree.  Wait a couple years and harvest--I'm just joshing you. 

  • 1 avocado
  • 1/3 of a small white onion, chopped up
  • 1 can diced tomatoes with jalapenos (or add your own jalapenos)
  • a dash of lime or lemon juice
  • salt to your liking
  • a tbsp. or so pomegranate seeds

Just scoop out your avocado and add your other ingredients.  If you don't know how to get into your avocado, just check out my instructions here. You can mash your avocado ahead of time with a fork if you prefer it smooth.  Mix and serve immediately.  Store in the fridge for up to two days.  Trust me, it won't last that long.  I recommend gluten-free crackers of various sorts and tortilla chips, of course!
